....all those affected by the tragedy in Boston yesterday.   Such unspeakable horror...there is real evil in the world.

Pondering:

...homeschooling curriculum for next year.  We're going to be switching over to Mother of Divine Grace for most things, except we will keep Math U See for math, and probably do Apologia for science and Sequential Spelling

...Also wanted to give a shout-out to the good people over at The Book Samaritan.   They are a wonderful Christian organization which helps provide homeschooling materials to families in need.  So, if you are in need of materials or have extra books or materials to donate, please consider contacting them.

Reading:

...a fluff mystery book.

 .... Ben got  this for me for Kindle when it was offered for free one day..  He knows how much I love mystery books and how much I hate mice (musophobia, anyone), so celibate mice are the best kind of mice as far as I am concerned.  I'm only on chapter 8, and, so far, I have no clue why the book is named that, as there are no mice mentioned as of yet.  

Thanking God for:

...mostly good health for our family.

Wandering:

.... a new blog I've been enjoying. Carrots for Michaelmas.

In the kitchen:

...my new favorite treat. Black bean fudge.  Mix up 2 cans of black beans (drained) with 3/4 cup coconut oil, 3/4 cup coco, 1 1/2 cups of sweetener (to make it healthier, use coconut sugar), 1 tsp vanilla and 1/2 tsp salt.  Whirl everything together in a food processor or blender until smooth, spread in a pan and let harden into fridge.  It doesn't get too, too hard, but hard enough and is a delicious, silky, smooth treat.   And, it's full of goodness like beans and coconut oil.

Happy Easter Monday!!

And, Happy April Fool's Day to those of you clever enough to play tricks.

Today I am:

Thankful for:

......My Mom, who sent us these lovely Easter candies...including my absolute favorite..chocolate truffles  There are also 3 chocolate ballerinas (not actually an upside down female symbol as they might look like int he pic.), a cross, 1 chocolate car and 2 peanut butter eggs!  Yum!!

If one were to look very, very closely at this picture, one might just find that a few of the truffles are missing.  That might, just might be that a certain someone who shall remain nameless couldn't resist trying a few, before snapping the picture!

They just arrived today..which was perfect because then I didn't need to have any willpower before jumping right in to indulge. 
 

 

...good friends...who had us and several other families over for a super fun Easter lunch/egg hunt yesterday.

Reading:

....Rapunzel, Let Down  by Regina Doman..who is my absolute favorite Catholic author.   I bought myself the Kindle version for only $5..and it's a real page turner.  Hard to put down!    When I finish it, I'll try to post a book review.

In the kitchen:

...baking a ham.  Since we weren't home yesterday, I'm making us ham today.  I only  make ham twice a year..on Christmas and Easter, but it is the one meat that everyone likes (hmmm...wonder why).  It's not the healthiest thing though..so I only make it twice a year and we enjoy it for a week, and then it's gone.   I actually looked in Whole Foods for a healthier version without any nitrates, and almost fainted at their prices..so we just went with the regular, unhealthy, nitrate-laden version.  Oh well.   I have a friend who taught me that every time we say grace before eating and bless the food, we should pray that God will protect us from any pesticides, GMO's nitrates or whatever other junk is in there.   I have another friend who always prays that the calories don't stick to her hips..but that seems..ummm...not quite orthodox to me, so I don't do that.

Playing Tricks:

....I'm terrible at April Fool's day tricks, but I did manage to convince my kids for some time that I had set cockroach traps in the garage, captures a male and female and was planning on starting a whole roach farm that I was going to keep in their beds.  They were quite aghast at the concept...and kept protesting to keep roaches in their bed and that no, roaches are NOT cute.  

Praying For:

....friends who need prayers...due to sickness or various other issue

.....for Ben to find a job and for the bar exam.

Pondering:

....topics for future blog posts.  I have so many rambling around in my head...just need to write them.

...currently doing a super, long, with Latin,  St. Joseph novena for Ben to get a full-time job by the time we need one. Poor St. Joseph..I feel like I'm always hounding his ear...I'm sure he's sick of me by now.
 ...for all the Cardinals at the Conclave..especially the Cardinal from Chile who I "adopted"
...for numerous friends suffering from numerous health issues.

  Reading
...nothing worth mentioning...a total fluff, entertainment book.
...The American Frugal Housewife. This was a free kindle book from like the 1800's. For some reason, I derive a great deal of enjoyment from reading old-fashioned housekeeping books. Plus, I've always wanted to know how to make a feather fan out of turkey feathers.

  Wanting to Read
...Baby-Led Weaning. Elsa turned 6 months old yesterday, so we "just" started giving her tiny tastes of food. I tend to skip baby food and just start with table foods..but I hadn't actually read THE BOOK yet.

  Wandering .
..over to Camp Patton. I just discovered this blog and have been enjoying it immensely. The writer/owner, Grace, has 3 children that are remarkably close in age. My children are all spaced fairly far apart, so I tend to have this fascination with families with closely spaced children. Plus, I just really enjoy her writing and humor..it's a fun blog.
  Wondering
...about the next Pope
...what happened to my nice, happy, content babe. It seems that overnight, she turned into this wicked grabby girl that whines and cries if she can't grab and mouth everything in sight.

  Trying
...a new recipe for Morning Glory muffins. Gluten-free of course. They have coconut, dates, carrots, apples, and almonds in them.

...the snap of "colder" weather we had this weekend.   It was a real gift, and I throughtly enjoyed taking walks without sweating!

 ...healthy children.  So many people I know are struggling with sick little ones, I so grateful that for the most part, my children are all really healthy.

 Reading:
 ..a total fluff, mystery book I got from the library for my kindle. I love fluff, mystery books. I can't even remember what it is called, it's that fluffy.

Pondering:
...birthday presents for an 11-year old girl. Her birthday was in February, but she received some money and can't decide what to spend it on.

Learning: 
...about the Papacy. We're going to be starting lapbooks on the Pope, thanks to Shower of Roses.
...new recipes..always learning new recipes.

Praying:
 ...for everyone I know suffering from illness
...for a job for my husband after graduation.
 ...the bar exam.

Wandering Around:
...besides the aforementioned, Shower of Roses Blog, I've really been enjoying reading on The Wine Dark Sea.  Gotta love a blog with the word wine in it's title.
...I've also been enjoying reading Shoved To Them.
 ...Shutterfly. I've been having some computer issues, so I've been frantically trying to back-up the last 5 years or so of pictures onto Shutterfly.

  Remembering

 ...old times. Since I've been uploading old pictures, I've been having some great memories. Here are a few old favorites

This was taken shortly before our wedding.   I actually think I may still have sweater.  It was one of my favorites!

This is one of my favorite pictures of me.  I was at a friend's house/playgroup in TN and Heidi was about 22 months old. I think I still have that sweater too.  Apparently, I am not too good at getting rid of sweaters.
